Two specialities, one family tradition: discover the taste of Noisettines du Médoc.

Our shops · Discover us · Our Quality Promise · Our story

In Blaignan, among the vineyards of the Médoc near Bordeaux, our family has been making hazelnut sweets by hand since 1979. From the delicate crunch of the Noisettine to the smoothness of our hazelnut spread, discover two ways to enjoy our signature flavour.

The Noisettine: a hazelnut wrapped in airy caramel

Noisettines du Médoc, handmade hazelnuts coated in airy caramel

It all began with a treat made for Edith. In the late 1970s, Michel Noyez prepared these hazelnut sweets in the family kitchen. Edith encouraged him to sell them, and the couple began taking their creations to markets around Bordeaux.

Today, we still select premium “Extra” grade hazelnuts and slowly cook them in a homemade syrup whose recipe remains a family secret. In our copper pans, the nuts gradually develop their flavour before receiving their distinctive light, crisp caramel coating.

The result is a contrast between the hazelnut and its airy coating: crunchy without being hard. Each small batch is made, sorted, weighed and packed by hand in our family workshop.

Noisettines contain no colourings or preservatives and are gluten-free and lactose-free.

How to enjoy them

Share them after a meal, enjoy a few with coffee or offer them as a sweet souvenir of Bordeaux and the Médoc. Crushed Noisettines also bring a caramelised crunch to ice cream, yoghurt and homemade desserts.

Crème de Noisettines: our artisan hazelnut spread

Created by Michel Noyez in 2001, our spread begins with the Noisettines themselves. They are ground and combined with water and lemon juice to create a smooth spread that preserves their hazelnut and caramel flavour.

With at least 65% hazelnuts, this is a different way to discover our family speciality. We make it without added oil, palm oil, emulsifiers, colourings or preservatives.

In 2002, this creation received a Coq d’Or award from the Guide des Gourmands.

From breakfast to the kitchen

  • Spread it on fresh bread, toast, crêpes or waffles.
  • Stir a spoonful into plain yoghurt or serve it with vanilla ice cream.
  • Use it to fill a cake, line a fruit tart or flavour a homemade dessert.
  • Explore sweet and savoury combinations by stirring a little into a meat sauce or serving it on toast with pan-seared foie gras.
  • Or simply enjoy it by the spoonful.

The name “crème de Noisettines” refers to our hazelnut spread, not to dairy cream.
